Dinner in a Pumpkin


Every year in the fall we enjoy Dinner in a Pumpkin. If you haven’t tried this yet, it is a fun activity and very yummy.



Dinner in a pumpkin
1 small to medium pumpkin with pumpkin guts removed
1 onion chopped and sautéed in 2 tablespoons of oil
1.5 lbs of ground beef browned
2 tablespoons of soy sauce
2 tablespoons of brown sugar
1 can of sliced mushrooms
1 small can of cream of chicken or cream of mushroom soup
1.5 cups of cooked rice
1 can of drained water chestnuts


Simmer all of ingredients for 10 to 15 minutes
Add all ingredients to the inside of pumpkin
Bake at 350 for 1 hour or until the meat of the pumpkin is soft

I haven't done it in a long time. That would be fun to do this fall.

I brought home a pumpkin this week, mostly just to enjoy the autumn season, but my roommate from Thailand wanted to know how I was ever going to eat all of that pumpkin! I'm going to have to try this and share it with her.
